My phone updated to 18 even though I was desperately trying to avoid it how can I undo this?

I refuse to take no it’s not possible for answer this disrupts me mentally and my phone! I hate this thing so fucking much! I need to find a way to get it back to 17 I don’t care about the methods I just need to get it back without losing too much data
