Family visit to Sousse from UK

Not sure if this is the best sub for advice.

Never been to Tunisia but I am fascinated by your historical heritage, food, people and that your towns largely reflect your varied cultural styles (unlike some Arab states trying too hard to be something they're not!!)

Will be staying for 2 weeks from the end of December through to early Jan near Sousse with my wife and 6 kids (!? ٱلْحَمْدُ لِلَّٰهِ) age range from 18yrs to 2yrs :-)

What's the weather like? I know we're coming in cold season but can't be as cold as the UK!!

What's the best place to entertain the younger kids (3 boys aged 2-7) and my older kids (3 girls aged 10-18)?

My wife and daughters want to shop for nice Abayahs. Any recommendations nearby?

Best food spots?

Must see buildings/Masajid? I'm an architect so already really looking forward to the trip but you guys will know some hidden gems.

I know there is a barter culture and I'm all for it but where can we shop without getting ripped off?

Best E-sim to use with data?
