Severe symptoms at 3am - is this usual?

Hi! For context, I have hydrogen dominant SIBO, started in 2023 but 2 rounds of Rifaximin didn’t help long-term and support in my area is poor. Last night I had an extreme flare up. I finished eating in the evening at 7pm, but my SIBO symptoms only began at 3am - the only thing I had consumed since 7pm was water. I have had a gut motility test (the one where you eat eggs and they track it through your gut) because I feel very full for longer than most would, even after small meals. They said that test showed my gut motility was fine, but from what I understand, hydrogen-based SIBO symptoms usually only occur 1-3hrs after eating?? If my gut motility is fine, why did it flare up so late last night? Or could the gut motility test be inaccurate? Thanks!
